Jambalaya experiment, round one
Oct. 26th, 2009 11:58 amWhile I was on Jury Duty, I had lunch at Marcela's in Pioneer Square (first and james), which had been recommended to me as an excellent Creole joint (recommendations coming from those who would know). I had the sampler, which had jambalaya, gumbo, and oyster(?) pie. The gumbo was good, but the spice mix wasn't really my thing (not bad, just not my thing). The pie was good, but kind of got overshadowed by the jambalaya. Dunno why, but that *really* stuck with me. I was suddenly focused on being able to reproduce it at home. Now, I recognize I may not be able to do this, cause I'm trying to do it without the sausage ingredient, but I'm willing to give it a shot.
First round: Need to mix up my own 'cajun seasoning', minus the usual amount of salt. I had to kind of guess at the seasoning, cause I didn't have everything on hand the recipe called for. I'll try it again, minus the shrimp (which I've already had two requests to leave out). And with the correct (mostly) seasonings.
But I give my first attempt a 'B'. I want to figure out the ratio to be able to cook the rice in the crock pot with the rest of the stuff, because mixing the rice in afterwards seemed to drop the seasoning into the 'bland' category.
