I don't *care* what the recipe says. Shortening is *not* an acceptible substitute for butter in a banana bread recipe.

OTOH, this realization frees me from feeling compelled to *keep* the two loaves that were made with not-enough-flour (burnt chop syndrome, anyone?). Now I can feel PERFECTLY OK with throwing all three loaves out.

Ew..yeah. Some of the flavoured shortenings (margarine) I suppose would be "ok" if you didn't know better or couldn't help it?

Having a dog helps significantly with the guilt of failed experiments.

I've been using olive oil instead in my banana bread - at least to me, it still tastes great.
